Perfect Summer Salad with Strawberry Dressing



This is one of my favorite salads to make.  It tastes so fresh and I love making my own dressings to go with my salads.  It doesn't have all the added junk that the store bought dressings have.

Summer salad ingredients:
sliced strawberries
unsweetened coconut
chopped almonds
chopped up apples
mixed greens

Strawberry dressing ingredients:
1 cup strawberries
3 tbsp fresh lemon juice
1 tbsp extra virgin olive oil
2 tsp pure maple syrup
pinch of salt

dressing directions:
Put all of the dressing ingredients in a blender or food processor and mix.

    Chicken and Veggies Curry Noodle Dish



      

    Jordan said this is his favorite meal that I have made.  Its really easy and sooo good!  I already want to make this tomorrow.  


    Ingredients:
    squash
    cashews
    pinneapple
    chicken
    tomatos
    yellow curry sauce (sprouts)
    chinese noodles (sprouts) or brown sticky rice (sprouts)


    Directions:  in a large pan put cashews, sliced squash, sliced tomatos, pinnapple chunks.  Pour yellow curry sauce on top of everything and let cook for 5-10 minutes until veggies are done cooking.  Then add in cooked chicken to the mixture


    Cook chinese noodles for five minutes and then add mixture on top of noodles and enjoy!

    Make Your Own Pickles!




    What you will need: pickling cucumbers (I got mine at Love Grows Farms), jars, vinegar, Ball pickle mix


    Boil 2 cups water, 1 cup vinegar and ball spices

    Once it boils, pour over all of your sliced cucumbers
    Let sit for thirty minutes and then place all of cucumbers in jars.

     Delicious Pickles!


    Place pickles in fridge for 1-2 weeks.  I can't wait 2 weeks so I eat mine after one week and they taste fine.
